This makes our products healthier for the consumer whilst also giving them an original and unique flavour.That is why germination is at the heart of our company's research, which is approved by the French Ministry of Research and Innovation.

Our company has a production site (recognised HACCP and Kosher) which is dedicated to the germination of plants such as cereals: wheat, rye, spelt and seeds: lentils, mustard.
This specific know-how is mastered by our specialists.

3. The nutritional benefit of germinated seeds

Germination naturally increases the nutritional content of seeds, particularly vitamin B5, polyphenols and GABA (brain neurotransmitter). This increase is an undeniable selling point, particularly for Asian consumers. Once germinated, the seeds are kept in their initial state, or roasted, or kept in a specific preserving environment, depending on their final use.

4. The taste benefits of roasted germinated seeds

Apart from being more nutritionally beneficial, germinated seeds also have an advantage in terms of taste; roasting the germinated seeds brings a crunchy airiness and new roasted flavours. Therefore, depending on the imagination of the food-processing companies' Research and Development services and on the cooks, the seeds can be used in many ways: soups, tabbouleh, biscuits, croutons.

5. The alchemy of leaven and germinated seeds

Apart from the preservation of the germinated seeds, a judicious association CLEAN LABEL® allows the development of milky aromatic flavours in the seeds which evolve towards aromas of dried fruit (figs, apricots). This occurs thanks to completely natural, inbuilt, biochemical reactions which generate phenolenic compounds: polyphenols which are a source of antioxidants.
GERMINOV the leaven paste specially created by our BAKING CENTRE is made from germinated seeds (with flour, rye, lentils and hemp). GERMINOV® is much like a vintage wine; it improves with time as it matures.
